Creamy Lemon-Mint Dressing

Ingredients

8 ounces plain lowfat yogurt
1 1/2 tablespoons lemon juice
2 teaspoons fresh mint -- snipped
1/2 teaspoon lemon peel -- finely shredded
1/4 teaspoon salt

Instructions

In a small bowl, combine all the ingredients. Cover and chill for up to 1
week. Stir before serving.
Serve over fruit or meat salads.
Makes 1 cup.
